Butternut Squash and Apples – Mary V

Ingredients

6 to 8 Jonathan apples, unpeeled and cut into wedges
1 1/2 tablespoons shortening
1/4 cup granulated sugar

2-3 pounds peeled butternut squash cut into chunks
1/4 cup butter
1 tablespoon brown sugar
Pinch of white pepper
Pinch of ginger
Pinch of cinnamon
Pinch of nutmeg

Instructions

TOPPING:
3 individual pkgs. Corn flake crumbs
1/2 cup brown sugar
2 tablespoons melted butter

Heat shortening in skillet.  Add apples. Sprinkle with the granulated sugar; cover and simmer until barely tender.

Steam squash 30 minutes until tender.  Mash or beat until smooth.  Add the butter, brown sugar and spices.

Place squash in buttered casserole.  Place apple wedges into the squash mixture.  Sprinkle with topping.

Bake 325 degrees for 12-15 minutes.
